One of my friends suggested that I do a vegan or vegetarian-friendly recipe for this cooking video, so I decided on a Mexican/Indian/Mediterranean-inspired palate for these tacos! Although I haven't tried many dishes from either of those three cultures, I did my best to use flavor profiles from each one. This was also my first video recorded in this new kitchen! Figuring out the filming angles with my phone tripod was pretty challenging, but I definitely think they're a step up from my older videos. Sorry the audio in the first ~5-8 minutes of this video is weird and choppy... I accidentally dragged my captions without noticing until it was too late to fix, so instead of taking another 20 hours to realign the captions + audio + video manually, I sped up some parts of the audio to match the subtitles... which makes me sound like a chipmunk. 😂 I have SO much respect for people who edit videos as a profession/career, because this stuff is PAINFUL (and hopefully worth it, so please watch 🥺) Let me know in the comments whether you enjoyed this video (or tap the ♡ heart)!
